Is there a way to delete something off of a backup on iTunes ? My phone updated and now I don't have any space to restore my backup and I was told I can't downgrade from ios7.1 to iOS 7.0.4

As far as I know you need a Mac, iOS, or I assume iCloud on windows. Go into backups and you can select items to delete (individual game data, app backups, books, photos, mail, etc.)

Are you saying that iOS 7.1 is taking more space than iOS 7.0.4? It shouldn't be that drastic. Before doing any deleting I would clean install your phone vs upgrade. During the clean install phase it will give you the option to restore iCloud backup after the clean OS is installed.
