I think this feature was added in Sequoia? In any case, you can now set the font size for various Apple apps in Accessibility > Display > Text size. Great!

But look at the size choices. You get 10-17pt at 1pt increment, then it jumps to 20pt -> 24pt -> 29pt -> 35pt.

What if your ideal size falls right in between those big gaps? Haha too bad, sucks to be you, Mr Magoo

Why do they do this? They already put in the work. All they had to do was have the UI to let you pick the exact text size you want. But nope.

Okay, so they don't want a long menu (so un-Apple-like!), or the slider isn't big enough because it doesn't fit into the stupidly narrow Settings window. Use a spinner instead? Or have the same menu of presets with an additional Custom... option and just let you type in the number?

It feels like they're just padding themselves on the back for adding this but don't care about how people with actual need for the feature will use it.

I give you no brownie point, accessibility team, and may god have mercy on your souls.

But seriously, does anybody know what the defaults write keys for these things are? Maybe it can be done that way.
