How can I make it so the info under my desktop icons is not cut off?

I have it set so I see the capacities of my mounted volumes, but the information is abbreviated to "fit" under the icons. This abbreviation is making this feature useless.

I generally see:
"232.44 GB, .... .59 GB Free"

I have what free? (View attachment)

I've seen other people's desktop pictures where this information is stacked under the icon, and not in a single line. How did they do that?

Icons titles cut off

I suspect it is not the size of your font that is the problem. Try closing all apps. Click on View/Show View Options and change the grid size to a large number. This worked for me.
