I've tried to search this site and others and while I've learned a lot, I'm hoping to get some clarification.

Regarding changing App names, I get the proceedure of editing info.plist, and CFBundleDisplay

However for permanent Apps (Phone, Safari, iPod) changing info.plist doens't do anything ... and (using WinSCP editor) if I look in infoplist.strings, I get the impression (from all the ASCII characters) that I shouldn't be editing those, at least with WinSCP.

So for example with Safari, can I edit English.lproj/infoplist.strings ?

Which is:

bplist00Ó_CFBundleDisplayName_NSHumanReadableCopyright\CFBundleNameVSafarim

Another example, Mobile Terminal, the info.plist shows up the same way. Is that a different way for the develper to save the file ?

Anyway, I've learned a lot by reading ... but I can't seem to find solid responses to these ... if I'm missing a source for this info, please help point me in the right direction. Thanks much for any assistance.
 
They're in binary format. Either use this to convert it to XML then edit it with notepad. Or google "plist editor" and download one of those.
