OP, changing the version number may work but if the game/application uses new routines/procedures only available in iOS 6 then it won't work.

Yep. And if a certain 6.0+ app calls for something that's not present in your 5.1.1 file system then you'd be stuck in a boot loop and will need a restore. Up to you if you want to risk it.
