Morning All,

I am thinking of installing Lion onto a spare USB drive, just so I can look more into the UNIX side of things and have a little bit of a fiddle about with Lion

I have a spare 40 GB USB drive to install it onto, so that I dont have to change anything on my main system

To install Lion on this, is it just a case of running the installer and pointing it to this drive (never installed onto external drive before), and if so, am I right in assuming this wont touch my installation on my MacBooko

Yes, run the installESD.dmg and choose the external drive. First run Disk Utility and make sure the external HD is formatted GUID. You are good to go.
