Just wanted to post this for any others who have the Quad iMac 27" and have been holding off installing Windows 7 until Apple get around to officially supporting it - well, Apple seem to be dragging their feet on that don't they.
I did the install a couple nights ago, 64 Bit Version, and it was easy as pie. Just make sure you use the Black Screen avoidance technique - basically removing the in-correct ATI video driver during the install process:

As well as the as the main instructions in the link above check the subsequent post after it paying particular heed to post 19 & 26.
Once I had done this when Windows launched it immediately downloaded the correct ATI driver for the iMac. After this I simply inserted the Snow Leopard Install disk and ran the appropriate .exe file to install other Apple drivers.
There are a couple of caveats to my success:
1. I'm using external speakers and they work flawlessly - there have been reports of Windows 7 not correctly outputting to the internal speakers however there are work-arounds posted on how to address this.
2. I use a USB keyboard which Windows naturally has no issue with.
3. Haven't been able to get the Magic Mouse to be correctly recognised by Windows 7 therefore using a USB mouse until I figure a solution to this.
Apart from the above it's all system go and playing Half Life 2 and COD MW2 with no hitches.
So there you go, other said it was easy and, in my case, it was.
