So I've just successfully hacked my iPhone and updated to 1.1.2!

Where do I start...

What apps do you all have running? I'm gonna have a browse, see what I like, but what are your suggestions?

There's a lot of good stuff to install by now. Here's a few that I think are particularly good:
Sketches - drawing app
Services - for toggling on/off Bluetooth, WiFi, SSH etc
VNotes - voice recording
Nikotalkie - voice messaging (SMS without typing sorta thing)
SysInfo - see hardware and running processes' info
Screenshot - best screencap utility
Search - contacts search utility

I tried to install new apps using installer but unfortunately I cannot find some of the ones that you listed, how can I find these apps?
For example, I searched VNotes on installer but it's not on the list of the apps that I can install
