I created menu-like structure with folders (presenting various categories) in dock for fast opening applications. So my dock is remaining compact and clear, containing only most frequently running and currently running applications. No more messing heap of icons!

Clickable preview:

But there are two little wishes. Is it possible to tweak dock someway to make following features?

1. I can open some application with 2 clicks: click (mouse button down and up) on folder, select application, and click again. But there is a faster way using click&hold: mouse button down, wait a bit, select application and button up. Is it possible to eliminate awaiting stage? I want behaviour like menu on the top of the screen: button down, and menu appears instantly, so I can select immediatly.

2. Also it would be cool if I would moving in various folders during click and hold, like in upper menu: click on any folder and select another without other clicks.
