Hey, I have quite a few 2012 Mac mini's, the i7 editions but they seem to have different SMC.

Some have SMC 2.8f1 and others have 2.8f0, but they all have boot rom 429.0.0.0.0

There are boot rom updates applied in both High Sierra and also Catalina security updates but the SMC difference makes me think an update may have been missed?

Would anyone know?

No idea what you might have missed, but this is what mine says (if that helps). Mine never had High Sierra, IIRC I went from Mountain Lion to Sierra, then to Catalina.

Mine has run High Sierra and now Mojave (never had Catalina). I guess that explains why my Boot ROM is 422. SMC Version is 2.8f1

Any reason why you are on 10.15.5? I think you would need 10.15.7 and the last security update 2021/2022 -005 to get yourself up-to-date with 19H2026. (Hey I have 2018 3.2ghz 6-core i7/2tb Mini as well, great choice by the way !!)

Sounds like you need an update to Catalina, Mojave was great but lots of updates and security fixes in Catalina! and a boot rom update thrown in!
