1. Although I would greatly appreciate the integration with my Macbook, I will miss a few Android specific features from my current Google Pixel - specifically, "silence unknown callers" and "call screening." Additionally, Android allows for a number of robust third-party (largely unapproved) ad blocking services. Are there iOS alternatives to these things or will Apple's walled garden largely prohibit such solutions?
2. From what I can discern, my Macbook already allows me to send iMessages without being tied to a phone number - how would directly tying the Messages client to an iPhone improve the experience?
3. I primarily use Spotify rather than Apple Music. Will it be possible to enable a Spotify widget on my home screen and/or control the Spotify client on my phone via an Apple Watch? Also, on this subject, will my Sony headphones default to the AAC or SBC audio codec when connected to an iPhone?
4. Can my iPhone still be used as a remote to control Chromecast devices in my house on the same network? I imagine the functionality is roughly similar, albeit slightly more limited for certain applications versus Android.
5. Is it possible to easily disable 5G on the iPhone 12? My area does have a 5G signal, but I don't consider the trade-off in battery life to be a worthwhile trade-off for sub-six 5G.
6. How widespread are iPhone 12 display problems? Just perusing Reddit and other tech forums, I've read lots of complaints about yellow or green tint, flickering, and various other technical issues. Plan to go with AppleCare+ anyhow, but just wanted to ensure that this particular generation isn't filled with lemons.
7. Is iPhone 11 a worthwhile alternative? The price for a brand new one is virtually the same price as a secondhand or refurbished model from elsewhere, providing a pretty compelling alternative. While I don't care about the 12's camera features or 5G, I would find it hard to go from a 1080p OLED screen to a 720p LCD.
8. As a final (very cosmetic) question, how "pink" is the Product Red iPhone 12? Personally, I like the "peach" or "salmon" hue, but just wondered if it would look abnormal for a dude to carry in public - plan on finding a dark blue or green case to offset it slightly.

iPhones support Silence Unknown Callers: Settings->Phone->Silence Unknown Callers. I use AdBlock Plus on my iPhone.

You can have messages sent using your phone number or an e-mail address. Both work equally well. I have my phone number tied to my iPhone and my e-mail address tied to my MacBook Pro. But you could have both your phone number and e-mail address tied to your computer. It is a matter of flexibility.
