I think its for people who have visual impairments - if you invert the colours, some screens are easier to read.

Thats way the setting is in the 'Accessibility' part in the Settings app.
 
If you're reading this forum on your phone then try it, white text and black background a bit more soothing on the eyes. Some times when listening to a podcast in bed using the apple podcast app with the phone in its speaker dock you get less glare.

Doesnt everyone? Lol. But seriously, i have yet to find ONE person that uses it for a logical reason.

My brother is legally blind. Huge blind spots in the center of his vision. He can still see out of his peripheral vision and can still do some reading. It is often easier for him to read if it is inverted. He still needs like 72 pt font, but the inversion really helps him too.

He doesn't have an iPhone, but he inverts colors if he is working on his computer or on his Samsung phone.
 
I had a stroke just over a year ago and it's caused me some vision problems and increased eye strain. I don't use it all the time, but in some cases, especially when my eyes really hurt, it can be a life saver.
 
I use it every day! When I use my phone and it's dark it's nice to beable to make things dark. Sometimes I use it just to make things like that MacRumors forums dark because I think it looks better.
