For the longest time, my iPad has been stuck on "Estimating time remaining...." for the iOS 12.1 Public beta 3 installation (I'm talking months probably but now it's annoying me and I want it to stop and figure it out).
I cannot for the life of me figure out how to stop it or update.

I've tried force quitting Settings.
I've tried manually deleting the iOS update from Settings>General>Usage however it instantly reappears.
I've tried a different Wifi network.
I've tried resetting my iPad.
I've tried connecting a cable to iTunes and clicking "Check for Update" however it says I'm on the latest version (iOS 12.1).
I've tried deleting the beta profile from Settings.

I cannot get this to work! I believe if I "Restore" my iPad, my backup will end up duplicating the issue will it not? Can I restore my iPad with a new version of iOS and then when I restore from backup will it revert back to the old iOS or will it only keep my data files (documents, music, etc.)?

Any help is appreciated.... thank you.

I'm thinking maybe I have to wait until iOS 12.2+ so that iTunes recognizes I'm not on the latest version.....
