iOS 4.2.1 -- Update -vs- Fresh Install ??

Which is better to do? I have backed up my iPad, I think I want to do a fresh install...

Does the "restore from backup" bring the old OS 3.2.2 back too, or does it just bring my apps/settings back.

I have the 4.2.1 release on a flash drive - so I know I need to shift-update to point my iPad to the update.

I'm not sure how to do a fresh install. Is there a link or help page that someone can point me to?

figured it out... !!

I did not see the "Restore" button in iTunes because the screen on my Eee PC where I run iTunes from is so small, I just hadn't scrolled down far enough. It appears a <Shift-Restore> does a fresh install. Gonna go try it...
