AirPlay mirroring and (hopefully temporarily) multitouch gestures (the version of Xcode out right now is too "old" for iOS 5, so you can't enable them as iOS 4.x: http://www.bittu.org/activate-and-enable-ipad-4-3-ios-multitouch-gestures-with-xcode-how-to/

When you really sit down and think about it iOS 5 is probably going to be the most fair software update in the history of iPhone OS. THREE generations of devices being supported on the same exact version[hence the iPad 1 shipped with 3.2 even though 4.0 was out] has never been seen before.
