I got my iMac to only be connected through Ethernet and still sync to my iPhone. I'm not sure how I did it, and I can't re-create it. Anyone else get this to work?

Is is going to cause any confusion if I only turn on my WiFi for iTunes syncing? I'd think wired ethernet would be better anyway.

It does it over the WiFi connection, not over an Ad-Hoc connection to your iMac (Although, I am sure it would work that way.) Assuming your iMac is connected directly to the same network that the iPhone is connected to (The iMac is connected to a port on your wireless router.) Then wireless syncing will work, I am sure that it uses Bonjour to find your local iTunes library and sync. There is no need to turn WiFi on your iMac on to sync.

LOL VOODOO! No, the wifi sync means it uses the network to sync, as in you have to be connected to a router. Computers can we wired or wireless.
