Every time I open the iTunes app in iOS 7.0.2 it keeps shutting down upon opening. Can I downgrade? When is the next update coming?

no you can't...

No idea...

Have you done a hard reboot (from home screen hold home and power buttons at same time until you see apple logo then release)?

Open the Music app, look for the "store" link, and use that to open iTunes. It's not a fix but a reasonable workaround for now.

This. I have this same issue a couple times. Task manager closing app, even rebooting phone will not fix it. But clicking on a "Store" link inside the music app will get around it.

I had the same problem, go into Settings/iTunes&AppStore and click on your Apple ID and sign out.

Re-open iTunes and then sing in again, that's how it worked for me.
