What is the Apple dictionary? I've noticed there are two English dictionaries. There's also the Apple dictionary. I have added and removed it several times to see what impact it might have and have not been able to discern any. Can anybody tell me what it does?

It adds Apple's dictionary to the define screen when you define a word.
