I've searched and searched for this but am clearly incapable of finding the answer to what I imagine is a fairly common issue.

When I recieve a notification now there is always a line of extra space in the notification, just black space. This makes sense when I'm getting an email, but it looks very awkward when receiving just a text or nearly anything else. Is there a way to change this, or is it a bug?

Can you post a screenshot? I'm not entirely sure what you mean. Black space or blank space?

The notifications themselves are slighter bigger than they were on iOS 6.

Its because they are probably going to ad quick reply like in OS X. Just enough room for that little icon to go there.

Well, as of now there's nothing you can do about it.

I hope it's there for future implementation of quick reply. If not, then hopefully they'll fix it and take it out.
 
I'm pretty sure you have that extra space because the notifications are a generic size, but because you don't have 'show preview' on, so its just not taking up all the space.

That's just the size of the new notification bar, not a bug, not changeable.

That extra space and the line are there so you can pull the notification down to reveal the notification center. It is new in Beta 5.

The "extra space" has been there since beta 1, and it's not extra space, just the size of the new NC bar, when you have preview enable, it fills the bar, the only new thing in beta 5 is the little gray tab that lets you know you can pull the bar.
 
If it was any smaller your finger would probably register as a touch and you wouldn't be able to pull down NC... it would unintentionally launch the app. (It would also be a nice place for quick reply :))
