I know the developer section says not possible, but can you DFU your iphone 5 and reinstall 6.0 as long as apple is still signing it?

Activation Lock will blocks restoring according to analyst.

So if you have ios 7 apple servers will automatically block you from "updating" to ios 6? Wondering since on the beta you could do this. P.S. not OP but another guy wanting to know the same thing.

I don't know if it's possible to revert or not. But, if it is possible, then you will want to grab something called "SHSH Blobs" from your device running iOS 6 with an app called "TinyUmbrella" first. You might be able to use TinyUmbrealla to revert your phone back to iOS 6.

I thought this doesn't apply anymore on A5 and A6 SOC only A4 and below SOC. I remember reading that saving SHSH Blobs no longer works.

Negative, downgrading back to iOS 6.1.4 works. Activation Lock will only ask you before you do a erase or for the boot up after a restore. Enter your Apple ID and you're in the clear forever.
