I just found out that apple is signing off on downgrades from iOS 8 back to 7 for the time being. Anyone have any if someone were to do this on an iPhone 6 plus would they lose such "iPad like" features as landscape home screen and column view mail?

Most likely no. So you are stuck with buggy iOS 8 till they release point updates.

There is no iOS 7 firmware in existence for the iPhone 6/6+. It would be impossible to load any variation of iOS 7 onto these phones as iOS firmware is device specific.
 
Indeed. Firmware is device specific. In order to use iOS 7.x on any iPhone 6, Apple would have to write a version of iOS7 for that device. I can guarantee you that Apple has no incentive to do this at all. It just won’t happen.

There is no version of iOS 7 that will work on the iPhone 6. It wasn’t written for that device.
