Just wondering, with iOS 8 extensibility, would one be able to make an app that could modify the home screen, and not have it locked to the boring old layout?

No, sorry. Developers can make keyboards, notification center widgets, photo editing, provide files, more Sharing options and some custom Actions, which are bound to in App use.

No way to extend the home screen in some way.
 
I just hope the icons are more spaced out on the larger iphone screens, similar to the ipad. Please don't just cram an extra row of icons in there.

Lol that reminds me. I am jailbroken and use springtomize to make the apo icons a bit smaller and more spaced out. Looked at my sisters iPhone the other day, totally forgot how HUGR those icons r by default
