With all the screen real estate on the iPhone 6 Plus, I sure hope that Safari doesn't default to a mobile site format, and uses the full site format instead. That would be the single reason to make me upgrade from my iPhone 5.

Does anyone know about this?

The iPad defaults to mobile for many websites, so why wouldn't the iPhone 6 Plus? Safari allows you to switch to full site version. There are also plenty of browser apps out there that have the option of defaulting to a full site version.

The iPad does? I've never seen that on mine.

Not all, but it happens often enough and it drives me nuts. Some sites actually have a "mobile" version that detects iPads and gives you a different page than either a phone version or a full version site.
