iOS8 allows the user to resize the Safari font on the iPhone 5 but I am unable to resize the Safari font on the iPhone 6+. Any suggestions.

It's geenra up to the web page whether you can or not. For instance, you should be able to do so on this page. Does pinching to zoom work here?
 
Mobile sites usually have bigger fonts.

On desktop sites, you can pinch & zoom.

You can switch to "desktop site" by tapping the address bar then pull down & tapping "Request Desktop Site" if available.

Thank You. Also found that by tapping the address address bar, I get a few icons for search engines (Google, etc) and Apple, along with an icon for the web page I'm looking at. Tapping that icon gives me the page in larger font.
