1. If I did a clean install of iOS 8 rather than upgrading, what information would not carry over from my backup? For example, would podcasts I've downloaded from Overcast all need to be hand picked out and redownloaded or would my backup contain the necessary information to make a perfect copy of my current iPhone's state?

2. If I decided to upgrade, how many GBs of data would I need available to complete the upgrade based on what the GM was. I know it varies, but if I'm working with an iPhone 5 from iOS 7.1.2 do I need to have around 4 GB to ensure I will be able to have the space necessary to upgrade tomorrow?
