iOS 9, up to 9.1, displays, under the subject line on emails received yesterday or today, a date such as "Today at 11:52AM" or "Yesterday at 2:44PM". This version of the "date" also ends up on a print of the email.
I don't watch a lot of Judge Judy but I don't think she'd be too impressed with evidence like that.
