I have switch carriers recently (EU) and when inserting new SIM card in my phone I got SMS with link from carrier to download new carrier profile. When doing that I noticed that said profile was unsigned and decided not to press install button, after few seconds profile disappeared and my phone is working fine with no problem with no profile installed.

I know that some carriers give you automatic settings (internet, mms hotspot) some require you input them manually in settings and some ask you to install carrier profile. My new carrier always worked automatically with iPhones and still does. What is point of carrier profile and why is often unsigned?
 
I may be wrong, but I think only Apple signs its own profiles. If another developer creates a profile for certain app functionality, it won't be signed but still can be legit.

For example, I use an email service as part of my web hosting plan and they provide an iOS profile to set up all the email settings so that iOS mail can access it without me entering lots of technical information in the Mail settings that are easy to screw up. This profile wasn't signed, but works perfectly.

You might be right but it still leaves a question what is point of carrier profile if my iPhone runs just fine without it? If carrier can setup your phone internet connection without carrier profile why does carrier make user to install one?

The profile may well help them manage their network.
