I'll be upgrading to the 5S, but until that arrives in the mail I'll be on my 4S. Should I update it to iOS7 or should I hold out until my new phone arrives (whenever that might be)? How has it performed on the 4S? Is there any difference in battery usage?

Runs flawlessly on 4s. Like you I will be upgrading to the 5s, but for me that will be in March when my contract is up for renewal with O2.
In the meantime the performance of iOS 7 on the 4s is superb, more than enough to tide me over until then. It runs flawlessly.
