Is there a way to do this? I don't want to upgrade to 5.01 because I heard it will be hard to jailbreak.
 
off the top of my head, apple have stopped signing iOS5 so you may have missed your chance. I'd stay on 4.3.3 for the time being as it's jailbreakable. It shouldn't* be too long for a jailbreak.

*could be a year, no one knows.
 
probably 5.0.1 is no different from 5.0 to jailbreak if one exists for iPad2...so i think it would not matter. but if you must keep your jb, suggest to stay on 4.3.3.

I remember seeing the dev-team saying if people wants untether JB then stay on 5.0 and don't upgrade to 5.0.1. So it does matter.

I am still on 4.3.3 with my ipad2. I need the JB so hopefully they will release the JB with the latest firmware rather than previous firmware.
