Hi guys.
I have a iPad 2 with up to date IOS.

Is there a way to access music (MP3 & M4A) and photos that I have on my Airport Extreme HD (or MacBook Pro) using WiFi?

Geniuses at the Apple Store were not helpful. Even..Smirking, perish the thought!

If you manage that music with iTunes on your MBP you can access it with Home Sharing in the built-in Music app.

Apple is driving people away while it sucks people in.

Maybe it's driving you away, but there are options available to you. For both photos and music iCloud allows for ready access between devices. It's not direct access to a wireless hard drive, but it's close. You can also use DropBox for photos.
