I'm out of ideas so turning to the MR community before taking this to the Apple store.
This has happened once before, but I didn't think much of it and since it eventually worked after a few tries, I figured it might have been all fine.
The battery was dead (which I found surprising since I had charged it fully recently, the exact same time I charged my Mini, and haven't used either device, yet the Air 2 was dead about 1-2 weeks later). I'm currently charging it and going through the cycle of it booting up and after 7 or so seconds, it just turns off. The lightning symbol appears next to the battery, so it's charging. I've tried to hold down the power+home button but it turns off before I can do anything. I had a passcode set up, and I can unlock the device.
I've tried charging it via the wall, computer, hub; different cables; etc.
It is jailbroken on iOS 9.3.x.
UPDATE: Just magically did a hard reset. If this works, I'll just update the OS.
