All the iPad/shoulder strap carrying bags I've seen have snap on straps. I'm going to NYC in a few weeks, so I want a bag that isn't so stealabe. Any ideas? (already googled and Amazoned the topic)

This is a Sena bag. Beautiful leather, padded compartment for the iPad. Strap is not snap on, attached with heavy metal link.

By steal able you assume a thief will unclip the strap. Their normal practise is to cut the straps. Any purpose built bag will just attract thieves. Go for something less conspicuous.
 
I use this one. I took the strap off of it, but that was just my preference. It's a great bag/sleeve.
