Okay, so here's what is going on:

My boss's wife's iPad (you've got to like where this is going) was originally synced to her windows laptop. He then synced it to his macbook. She now has a new laptop and wants to sync it back to her own material.

How can we do this without having all the data on the ipad erased?

I'm not sure what my boss has done but this is what his wife wants (so she doesn't lose any apps/calendars/etc).

You can't. An iDevice can only be synced with one iTunes library at a time.
 
i don't know if there are any differences in the file formats between itunes for macOS and windows, but you can try copying the most recent backup folder from which machine was last synced to the ipad and copying that to the new machine and doing a restore.

iOS restores are sort of a misnomer however as a restore doesn't actually restore a lot of things. the good news though is that apps are tied in to the app store account so you won't lose those.
