So I've created an iPad icon (72px x 72px) so that when you "Add to Homescreen" is uses my image instead of a screen shot. Right now it currently only uses it for the Home Page, is their any way to make that "bookmark" so to speak link to a different page instead of the home page?

The web clip shortcut goes to whatever page it was created from. If you want it to go to a particular page, you must add it to the homescreen from that page.
Also, you might want to consider using 144x144 for the image size to benefit new iPad users.
