I know there's no 3.5mm jack for this, but I just looked up the pinout of the iPod dock, and pins 5 and 6 would be used for right and left audio in. Thinkin' about makin an adapter coupled with a future Audacity app would be great

IIRC, the iPad has a built-in microphone, right? If so, I'd think it has A/D converters.

Yes built in microphone. Whenever there is an iPad disassembly, I'm sure we'll find out

Have you succeeded in making such an adapter?... i just found out the 30-pin connector doesn't support analog line-in... It seems a bit unreasonable.. anyone can confirm?...
