If I send an e-mail from my MBP, why does it not show up in my sent folder on my iPad, or on my iPhone? Is there a setting I'm missing?
 
You can log into your email provider via a web browser and look at the settings. The two most popular types of email are POP and IMAP. Only IMAP will sync email accounts, though.

You might check to see if your email provider offer an IMAP option. Some do, some don't. You could always set up a free iCloud email account and just forward all your messages you get from your current email to the iCloud address, too.
