Do you have to have purchased AppleCare for it to show up? My iPad Pro 12.9" from launch November doesn't show up on my list... weird. But my iPod from 11 years ago does, haha.

No...any device you purchase from Apple using your Apple ID should show up. You can always manually add devices too. Just makes it easier if you need any repair or troubleshooting.

My iPad Pro is also showing up on my support profile, I believe it got on there today. I also just found the tracking information on UPS

All hardware purchases from Apple should appear automatically. My 9.7" Pro appeared a couple of days ago. The Apple Pencil I had delivered early last week also appeared on there automatically. However as mentioned you can manually add them if they don't automatically appear.
