I sold my friend an original ipad 1 with 3g last year. It was one of the original units that came out, when they offered unlimited data with At&t. The sim was never activated. If I get that sim, is it possible to open an unlimited data account? If I buy an iPad 2, and put the unlimited data sim in, will it work?

Negatory. The SIM has nothing to do with it. Since you never activated the unlimited plan and subsequently kept paying for it every month, there will not be an option to select the unlimited plan.
