It would be a new plan so it would end your unlimited.

Why would it end the unlimited? When I got the 4S it changed the name of the plan, but I was still able to keep unlimited. I imagine it would be the same. Maybe the iPad is different?!?

4S was still 3G. I fully expect AT&T to use the move to LTE to get people off unlimited plans.
You can grandfather your way into a LTE Unlimited Data plan (family member already has).
I've kept my unlimited data with AT&T through the following devices:
iPhone 1 > iPhone 3G > iPhone 4 > iPhone 4S > Samsung Galaxy S2 SkyRocket
from 2G to 3G to 4G HSPA+ to 4G LTE.
I'm sure they would do the same with the iPad.
