I am wondering about the iPad 2 and if it "holds" more apps in the memory longer then iPad before shutting them down.

Yes. Double the RAM so it can "cache" more "stuff". For example, if I have 4 web pages open, my original iPad would almost always refresh each web page if I went back to it. My iPad 2 can keep them all in memory. Same is true for Apps.
