Hi
I am picking up my iPhone 12 on Friday (exchanging my iPhone 11).
I know that the new iPhones don't come with a charging block and the cable is USB-C to Lightning. My wife and I use a multi-port charger when we travel and at night (which obviously us USB ports, not USB-C). Assuming I don't care about the faster charging, can I still (safely) plug my new iPhone 12 into the charger using the older USB to Lightning cords?

Yes, you can.
