Is playback of those files jerky and stuttery on the phone?

Because those videos look fine to me playing in Chrome on Windows. So it doesn't appear to be a problem with the files themselves.

I looked at iMac, there is a slackness a little … but on the iPhone is strongly noticeable what it can be connected with?

Video playback on all 3 videos look fine on my 12 Pro Max via both Safari & Chrome.

I would suggest the original poster books an Apple Genius Bar appointment to take a look directly on the device.
