So I noticed last night that I have a small cluster of pixels that randomly turn blue whenever the image on screen is stationary, it's not so noticeable during the day but at night it is extremely distracting. I've uploaded a video of it, when I pull down it disappears then reappears. Needless to say, this $1,000 phone will be going back to Apple.

Have you tried a reset of the phone first before you return it? It may be the first thing that apple ask 😁. But yes it does look like you may have a faulty screen unfortunately and hopefully apple can help you out. Have you downloaded the apple support app on your iPhone? Easiest way to get in touch with them and you can even talk to them on there via text which does speed things up as you can carry on with your day 👍

I haven't tried factory reset it. I'm hoping it goes away as having to set it all up is a pain. I'll probably try it this weekend as I plan on going to the Apple store to buy my wife a 13 Mini so I'll just do both. Was more curious to see if this is an isolated issue or not. I've experienced stuck pixels before but this is something different as it goes away as soon as the image changes.
