Imo it's a toss up. Both the S21 and iPhone 13 show good to great result in the video.
The night mode comparison is subjective. Some may prefer the iPhone's instead of making a dark scene to seemingly almost daylight. The goal of night mode should not be to make everything bright, but to capture the photo as one would see in the lighting condition.

But color wise, at least from the video, I prefer Samsung's. I personally prefer the warmer color temps, although most people that I know would prefer cooler temps. Maybe that's why we see Apple's image processing shifting towards the cooler side.
