I started a long car trip this morning only to realize that when playing music on my phone, over headphones, the music pauses and restarts itself. This occurs when the phone is locked and also when I'm using other applications on the phone, this also seems to cause an awful amount of lag to occur. I have the latest firmware installed and thought that might be the cause but did not listen to the iPod in 2.0 enough to say that is the problem.
Any help would be appreciated.
 
Since it restarts on it's own and the issue is still there, have you tried Resetting your iPhone.

If that doesn't work try Restoring, otherwise you may need to call Apple.

Also, the issues occur with or without the headphones, correct? In case it's a headphone issue or if the headphone contacts are being disconnected briefly.

I'd be a little more concerned with the fact that you're driving and listening to headphones.
