I currently have an iPhone 3G that is jailbroken and is running the 2.2 software, and I want to buy an iPhone 3GS. I was looking at several sites online to figure out the process I need to go through to restore my jailbroken iphone (to put 3.0 software on it for purposes of re-selling), and from what I read, when I do this, I will lose all of my contacts, photos, etc.

My real question is this: now that the 3GS is available, can I simply:

1- sync the contacts, photos, etc on my current jailbroken 3G iphone in itunes. (i have a mac running itunes 8.0.2)
2- walk into the apple store and buy and activate and 3GS (not bring my jailbroken phone with me).
3- sync the newly purchased 3GS phone to my itunes.
4- THEN deal with restoring my old jailbroken iphone to factory settings (for purposes of re-selling)?
