iPhone 3G unlocked/jailbroken -- want to remove MY items..

I have a jailbroken and unlocked 3g full of apps and contacts. I figured out how to remove the photos from the phone with iTunes, but I cannot get my contacts and purchased apps off the phone.

I want to sell it (i got the iPhone 4) but I don't want any of my stuff on it and would like to keep the unlock and jailbreak on the phone for the sake of profit.

You can delete the contacts and apps manually one by one or
Restore, jb and unlock all over again.
