Iphone 3g without sim.. use as ipod?

I am buying a iphone 3g for 180 bucks that is currently on at&t. Im assuming he is taking his sim card out so when i buy it it will have no sim..

I will be getting tmobile simcard and a turbo sim so i can unlock it, but not intill my helio contract is done in may. (I believe the version he has on it right now cannot be unlocked due to the modem fimrware.)


Intill then I would like to use it as an ipod touch bassically. Can I jailbreak it and use it as an ipod even if there is no sim card in the slot?
