I recently imported the .plists to allow my 3Gs to record in 1280x720. However, after seeing that the frame rate dropped 10 frames a second, I wanted to downgrade to 1080x800.

After doing so, my phone slowed down for a while and accessing the camera app yielded nothing but a black screen. After a minute or so, the camera started working again, but the phone recording still at 1280x720.
I have gone into a browser for my iPhone and looking directly at the keys responsible for encoding the video and they are set at 1080x800. But anything my phone records now is pushed up to 1280x720 somehow...
Is there something I'm missing that's bypassing these settings and auto-converting it to this resolution?
Any help would be greatly appreciated :)
