Sorry for bad english, my primary language is french.

Tethering mean you need to plug the iphone/ipod into a computer and boot it with redsn0w as soon you rebootor close the iphone/ipod to let cydia work right?

If that right, why my iphone jailbroken on 5.0 can act like an untethering one?

With my iphone 3gs, i can close it / reboot without plugging it into a computer with redsn0w and cydia will still work normally.

Someone can explain what i did wrong?

Well from what I've read, if you have a 3GS with the old bootrom then you can have an unthethered iOS5 jailbreak, so I'm guessing that you have an iPhone 3GS with this bootrom which is a good thing for you :)
